Biologists have learned that cancer is a multi-step process, in which a cell has to jump through many biological hoops to become malignant. Phytochemicals seem to be able to throw a biochemical wrench into one or more of the mechanisms leading to tumors. Scientists at Cornell University reported in 1994 that 2 of tomatoes’ 10,000 phytochemicals, p-coumaric acid and chlorogenic acid, snuff out the formation of cancer-causing substances. “The whole tomato is more effective against [carcinogen] formation than just the vitamin C component,” says Cornell’s Joseph Hotchkiss. “You can’t have a lousy diet and take a few vitamins and get the same benefit.” Scientists in Germany isolated a phytochemical in soybeans, called genistein, that interrupts supply lines of tumors. This phytochemical seems to keep tiny tumors from getting connected to capillaries that carry oxygen and nutrition. Without these supply lines, the tumor never grows, metastasizes, or kills. Garlic and onions contain phytochemicals called allylic sulfides that seem to protect against stomach cancer. They work by waking up enzymes inside cells which detoxify cancer-causing chemicals. Almost every fruit and vegetable produces flavonoids, a phytochemical which races to the sites of cancer-causing hormones such as estrogen, stopping the attachment of the hormones to cells. The overall message in these new discoveries is to eat a diet full of whole grains, fruits, and vegetables. But many Americans are constantly on the run, and take no time to prepare these simple foods from day to day.

Thus, the nutritional supplement industry began examining methods of flash-freeze drying these phytochemicals in the food, and putting them in pill, capsule or powder form.
